Like brownies? Trying to get rid of wheat and gluten in your diet? While there are gluten free brownie recipes out there, this one is a bit different.
# 1 medium raw white sweet potato, peeled and grated, 2 to 2 1/2 cups of shredded sweet potato
- Use the larger holes on your grater
# 2 whole eggs
# 2 tsp vanilla extract (Be sure that it is not the fake vanilla extract.)
# 1/2 cup of raw honey
- Soften in the microwave if it is too thick
# A generous 1/2 cup of virgin olive oil
# 1 heaping tablespoon of baking powder (gluten free)
# 1/2 tablespoon of baking soda
# 1 cup unsweetened cocoa powder (Use a little less if you would like a milder chocolate flavor)
# 2 tablespoons of coconut flour
# 1/2 cup to a cup of dark chocolate for melting
PREPARATION: STEP BY STEP
STEP: 1
Preheat the oven to 365 degrees Fahrenheit (185 degrees Celsius). Be extra sure that the oven is at full heat before you put the brownies in.
STEP: 2
In a large mixing bowl, mix together the grated sweet potato, eggs, vanilla, honey, and olive oil. Be sure all of the ingredients are thoroughly incorporated.
STEP: 3
Add the baking powder and baking soda to the above ingredients and stir together. Don't be concerned about the 'unexplained' fluid. It's the interaction of all of the ingredients so far.
STEP: 4
Add the cocoa powder and mix together.
STEP: 5
Add the coconut flour.
It needs to be the last ingredient added because it absorbs a lot of
moisture which will cause your brownies to be drier than you might like.
Once you have stirred everything together, pour the batter into a pre-oiled baking tray. About one inch tall is the best height.
- Be aware that if your brownies are too thin, they could overcook and if it is too tall, it could have an undercooked middle.
STEP: 7
Cook for 25-30 minutes. Remove the tin and cool for 5-10 minutes before carefully removing the brownie cake from the tin. You can cut it into quarters and remove one part at a time, if the bottom sticks a little. Leave the brownie cake to cool down before cutting.
STEP: 8
Melt some dark chocolate.
Use a spatula to drizzle and spread the melted chocolate over the top of the brownies.
STEP: 10
Slice into 12 individual squares. Be prepared for some really rich deliciousness!!
Tips
# Try topping your brownies with fruit for a little something extra. Raspberries and strawberries are some good choices.
# The results are very rich tasting, so cut the brownies into small pieces.
# Use from 1/2 cup to 1 cup of dark chocolate chips for the topping; depending on your preference.
# You can drizzle the chocolate as it is, when you melt it, or add about a teaspoon or so of coconut oil. It will still harden, but it is more 'frosting like'.
